Hey Neil,,,,
The last hunter safety course I attended was 9 years ago when my youngest daughter first got her license. I already had my license but I sat through the course with her (2 days back then also) and while I originally thought I was gonna be bored outa my mind sitting there I actually found the class extremely interesting.
They covered just about everything you could possibly think of,,,, game identification and habits, hunting techniques, skinning, gutting, care of the meat once harvested, safety, basic game laws, and so many other topics I can't even recall them now, but the class was really extremely informative and I was really impressed. They also gave each student a bunch of really excellent printed material including landowner permission slips, color game I.D. charts complete with detailed pics of the tracks made by each animal. It was really a great class. I think you're gonna really enjoy it.....
